The Best Turkey Stuffing Ever: Mofongo

What a great way to give thanks with this awesome recipe:


6 green plantains, peeled and sliced into 1″ chunks
5 slices of cooked bacon
6 cloves garlic
olive oil, salt


Soak plantain chunks in salt water for 15 minutes.  Dry thoroughly and fry in 325 degree oil for 10-15 minutes or until very soft.  Remove to a colander and let drain until cool enough to handle.

Meanwhile, mash up garlic and bacon in pilón.  Add salt and sprinkle with olive oil. Working quickly, place the stuffing into the cavity of the turkey to avoid losing heat. Place the turkey into a roasting pan, on a rack, and season with salt and pepper. Place the roasting pan on the middle rack of the oven. Roast for 65 minutes and then reduce the heat to 350 degrees F and cook for another 60 to 75 minutes or until the bird reaches an internal temperature of 170 degrees F.

Serve immediately !!!
